Ocean Wise Month, and The Oysters of Sawmill Bay
We’re pretty excited about November being Ocean Wise month, and we kicked it off by going up to Sawmill Bay Shellfish Co. to see first hand what goes on up there… by up there I mean past Campbell River, past Quadra Island, in a bay somewhere off Read Island (population… maybe 50 😉 )

So, anyways, when we get these oysters driven down less than 24 hours out of the water, we’re inclined to not mess with them too much…
Ideally, we want to serve these clean, fresh shucked, with just a mignonette. we serve ours with pickled ginger mignonette and a wasabi cocktail sauce (whenever possible, made with local wasabi from Natural Pastures)…
