COCONUT-CORN CHOWDER Recipe: 2 oz olive oil 2 large onions 1 jalapeno 16 oz shucked corn ½ L coconut milk sea salt white pepper
  1. Heat olive oil
  2. Lightly seat onions in jalapeno
  3. Add corn, sautee 15-20 min
  4. Add coconut milk and 1 litre water
  5. Allow to cook and reduce to desired consistency
  6. Finish with salt and pepper
  7. Chopped cilantro
